The INAO is a public organisation, established by Government Decree on July 30, 1935, which law was amended on July 2, 1990 and again on July 10, 1999.

The objectives of the organisation are :
- To grant the Designation for controlled French Origin of which it also elaborates the regulation and defines the geographical domain;
- To monitor the corresponding conditions of production;
- To protect the acknowledged domains of appellation, and, in general, protect its geographical indications on a national and international level.

INAO is a public administration organisation that works in close collaboration with professional organisations at the level of the following three national sectors:
- Wine and eau de vie;
- Dairy products;
- Nutritional products.

Since July 1999,
the INAO carries the responsibility for all the labels related to its origin, including the Protected Geographical Indication (IGP). This was created in addition to the designation for controlled French Origin by the European regulation.
A fourth committee was established separately to manage the IGP in a similar configuration of the formal three committees.
